I'm actually very bad at keeping things dry, so I avoid high carbon in general.

The one HC knife I have was razor sharp (not really an exaggeration) for a very long time and with no care from me, and much abuse. You could split hairs with it after a few weeks in my pocket.

Depends on the pocket. A granola bar or an apple in the coat pocket is OK. Anything in the pants pocket is not a good idea.
And chocolate candy bars? Best to keep those away from the body entirely until the time comes to eat it. Yes, I'm speaking from personal experience. No, I won't provide details.

Out of the two, alligators. But that's showing a remarkable lack of imagination - disappointing for an evil "genius."
For better effect, use a tank of piranhas. Or even better - gerbils genetically enhanced to eat meat.

Definitely not brass.
I tend to prefer strings (I like me some good rock music, so guitars and bass are a given), but woodwinds are pretty good, too. Especially toward the lower tones, like a clarinet or an oboe.
But you can't discount the vocals. A singer can really make or break a song, no matter how well the other people in the group perform.
